1. Choc chip cookie brownies

  • 225 g butter
  • 1 cup brown sugar
  • 1/2 cup caster sugar
  • 2 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 2 eggs
  • 1 tsp salt
  • 2 cups plain flour
  • 1 1/2 cups walnuts (coarsely chopped)
  • 1 1/2 cups dark chocolate (coarsely chopped)
How to make: 
  1. Preheat the oven to 180˚C.
  2. Cream the butter and sugars together until light and fluffy. Add the vanilla and then the eggs one at a time, beating well between each addition.
  3. In a second bowl, sift together the flour, bicarb soda and salt. Add the flour mixture to the butter mixture slowly, while beating the mixture on low.
  4. Fold in the walnuts and chocolate chunks.
  5. Spread the batter/dough into a large 20cm x 30cm baking pan. The mixture will rise, so don’t worry if it looks a little thin once spread into the tin.
  6. Bake for 30 minutes. Cool completely and then cut into squares.

  • 3 cups pasta, uncooked
  • 3 Tbl. butter, unsalted
  • 8 oz. Velveeta cheese, cubed
  • 1 ¼ cup sharp cheddar cheese, shredded
  • 1 tsp. Dijon mustard
  • 1 cup milk
  • ½ cup heavy cream
  • 1 tsp. salt
  • ¼ tsp. pepper
How to make: 
  1. Cook the pasta in salted boiling water for 5 minutes or until it is just under al dente.
  2. Drain and place in the slow cooker.
  3. Add the remaining ingredients to the pasta and stir until well combined.
  4. Cook on high for 2 – 3 hours stirring about every 30 minutes.

  • 6 tbsp pizza sauce
  • 4 slices ham, diced
  • 1 tin (440g) crushed pineapple, drained well
  • 3 cup pizza cheese (preferably Edam cheese for a reduced fat profile)
How to make: 
  1. Toast the muffins in the toaster and spread 1 tablespoon of pizza sauce on each.
  2. Scatter ham and pineapple on the pizza sauce.

  • 1 tablespoon canola oil
  • 12 ounces ground turkey breast
  • 1 cup chopped onion
  • 2 cups thinly sliced kale
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon garlic powder
  • 4 ounces presliced mushrooms
  • 1 1/2 cups 2% reduced-fat milk
  • 1 1/2 tablespoons all-purpose flour
  • 3 ounces Swiss cheese, shredded (about 3/4 cup)
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 4 whole-wheat hamburger buns
How to make:
  1. Heat oil in a large nonstick skillet over medium-high.
  2. Add turkey; cook 6 minutes or until browned, stirring to crumble.

  • 2 1/2 pounds ripe tomatoes (about 6 large)
  • 1 tablespoon olive oil
  • 1 1/2 cups chopped onion
  • 2 garlic cloves, minced
  • 2 cups unsalted chicken stock (such as Swanson)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 ounces 1/3-less-fat cream cheese
  • 3/4 cup coarsely chopped fresh basil
  • 4 (1-ounce) slices whole-wheat bread
  • Cooking spray
  • 1.5 ounces cheddar cheese, shredded (about 1/3 cup)
How to make:
  1. Place oven rack on top third of oven. Preheat broiler to high.
  2. Halve tomatoes crosswise. Place tomatoes, cut sides down, on a foil-lined baking sheet. Broil 5 minutes or until skins are slightly blackened. Remove and discard skins. Discard foil.
  3. Heat olive oil in a large saucepan over medium-high heat. Add onion; sauté 3 minutes. Add garlic; sauté 1 minute. Stir in tomatoes; cook 2 minutes. Add chicken stock, salt, and pepper; bring to a boil. Stir in cream cheese and basil.
  4. Carefully place tomato mixture in blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a kitchen towel over lid (to avoid splatters). Blend until smooth. Divide soup evenly among 4 bowls.
  5. Line baking sheet with foil. Coat 1 side of bread slices with cooking spray; turn over. Top 2 slices with cheese and remaining bread slices. Place sandwiches on pan; broil 30 seconds on each side or until toasted. Cut each sandwich into 6 pieces; top servings evenly.

6. Brown-sugar barbecue chicken drumettes

How to make:
  1. In a medium bowl, whisk together ketchup, sugar, Worcestershire, and vinegar; season with salt and pepper. Set aside 1 cup sauce for tossing raw chicken; use rest for baked chicken.
  2. Preheat oven to 450 degrees, with racks in upper and lower thirds; line 2 rimmed baking sheets with aluminum foil.
