  • 2 cups unsweetened cocoa powder
  • 2 mashed bananas
  • 3-4 cups of cow’s milk

Directions:

  1. Put all the ingredients in a blender and blend them till they are evenly mixed.
  2. Add some milk to thin the consistency and ensure that there are no solid lumps.
  3. Smoothies are best served cold and are ideal for summers.

2. Pancakes

Ingredients: 

  • 2 beaten eggs
  • 2 mashed bananas
  • 1 cup mashed oatmeal
  • 4-5 cups refined wheat flour
  • 1 cup toddler cereal
  • 1 tablespoon refined vegetable oil

Directions:

  1. Mix all the ingredients except vegetable oil in a large bowl and whip them.
  2. Heat a tablespoon of vegetable oil in a frying pan. Spread the oil evenly using a spatula.
  3. Pour the batter into the pan and cook till the pancake develops a brownish crust on the top. Turn it over with the spatula and cook for little over a minute.
  4. Cool the pancake and serve with some honey.

3. Overnight Apple Crisp Breakfast Parfait

Ingredients: 

  • 1 (5.3 ounce) container Greek-style vanilla yogurt
  • 1 apple, diced
  • ¼ teaspoon apple pie spice (can substitute with ¼ teaspoon cinnamon and a pinch of nutmeg)
  • ¼ cup cooked quinoa, packed (or you can substitute with oats, granola, or cooked brown rice)
  • 2 tablespoons chopped toasted pecans or granola, for topping
  • Optional: whipped topping

Directions:

  1. Place diced apple in a microwave-safe bowl. Sprinkle with apple pie spice and toss to coat. Microwave on high until apple reaches desired softness (approximately 1-2 minutes). Set aside to cool for a few minutes.
  2. In a separate glass jar or other container, place half of the yogurt.
  3. Top yogurt with half of the cooked apple.
  4. Add 2 tablespoons of quinoa on top.

4. Bacon ‘n’ Egg Breakfast Grilled Cheese

Grilled cheese isn’t just for lunch or dinner, add a scrambled egg and some bacon for a yummy breakfast version.

Ingredients: 

  • 2 eggs
  • 2 tablespoons milk or water
  • Salt and pepper to taste
  • 3 teaspoons butter at room temperature, divided
  • 4 slices whole wheat or white bread
  • 2 slices slices Colby-Jack cheese
  • 4 slices full-cooked bacon

Directions:

  1. In a small bowl, beat eggs, milk, salt, and pepper until blended.
  2. In a large nonstick skillet over medium heat, heat 1 teaspoon butter until hot. Pour in egg mixture. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large, soft curds. Continue cooking — pulling, lifting, and folding eggs — until thickened and no visible liquid egg remains. Do NOT stir constantly. Remove from skillet.
  3. Spread remaining butter evenly on 1 side of each bread slice. Place 2 slices in skillet, buttered side down. Top evenly with scrambled eggs, cheese, and bacon. Cover with remaining bread, buttered side up.
  4. Grill sandwiches over medium heat, turning once, until bread is toasted and cheese is melted, 2 to 4 minutes.

5.  Strawberry-Coconut Scones

Ingredients: 

  • 3 1/4 c. all-purpose flour
  • 1 c. sweetened flaked coconut
  • 1/4 c. sugar
  • 1 tbsp. baking powder
  • 1 tbsp. grated lemon peel
  • 1/2 tsp. salt
  • 3/4 c. heavy cream
  • 2 large eggs
  • 1 pt. (12 oz) strawberries
  • 2 tbsp. sugar

Directions:

  1. Heat oven to 375°F. Coat a large (14-in.) baking sheet with nonstick spray
  2. Mix first 6 ingredients in a large bowl. In a small bowl, use a fork to blend cream and eggs. Pour over flour mixture, add strawberries and stir just until mixed and dough clumps together. Scrape onto center of prepared sheet. Pat into a 9-in. round (dough is very sticky). Sprinkle with the 2 Tbsp sugar. Coat a long knife with nonstick spray; cut round into 8 wedges (don’t separate wedges)
  3. Bake 30 to 35 minutes until puffed and well browned and a wooden pick inserted in center comes out clean (strawberries will caramelize on sheet)
  4. Re-cut wedges. Serve warm or at room temperature.
