Everybody loves French fries! But as “Rich Dad Poor Dad author Robert Kiyosaki once said, “French fries kill more people than guns and sharks, yet nobody’s afraid of French fries.” So here are 6 super healthy (not to mention yummy!) veggie fries recipes that your kids will actually eat:

1. Baked Parmesan Zucchini Fries

Ingredients:

  • 4 zucchini (quartered lengthwise)
  • 1/2 cup freshly grated Parmesan
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp garlic powder
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 tbsp olive oil

Directions:

  1. Preheat oven to 350 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
  2. In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste.
  3. Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown.
  4. Serve immediately.

2. Sweet Potato & Carrot Fries

Ingredients:

  • 1 large sweet sotato (washed, peeled, and cut into fries)
  • 4 carrots (washed, peeled, and cut into fries)
  • 2 tbsp olive oil
  • 2 tsp smoked paprika.

Directions:

  1. Firstly, pre-heat the oven to 375 degrees F.
  2. Then, place all the carrots and sweet potatoes into a mixing bowl and toss with the olive oil and smoked paprika until they are all coated.
  3. After that, place them a baking tray on one single layer.
  4. Bake for 35 mins, turning half way through.

3. Asparagus Fries

Ingredients:

  • 1 cup Panko*
  • 1/2 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper (to taste)
  • 1 pound asparagus (trimmed)
  • 1/4 cup all-purpose flour
  • 2 large eggs (beaten)

Directions:

  1. Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a large bowl, combine Panko and Parmesan; season with salt and pepper, to taste. Set aside.
  3. Working in batches, dredge asparagus in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
  4. Place asparagus in a single layer onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown and crisp.
  5. Serve immediately.

4. Crispy Baked Portobello Mushroom Fries

Ingredients:

  • 2 large portobello
  • 1/3 cup all purpose flour
  • 2 eggs (beaten)
  • 1 cup Panko
  • 1 1/2 tsp steak seasoning

Directions:

  1. Heat oven to 425 degrees F. Line a baking sheet with aluminum foil or parchment paper.
  2. Remove the stalks from each mushroom then use a spoon to scrape out any dark gills from the underneath of each mushroom and discard. Cut mushrooms into 1/4-inch slices.
  3. Set up a breading station by adding the flour, eggs and breadcrumbs to three separate shallow dishes. Add the steak seasoning to the breadcrumbs and stir.
  4. Dredge each mushroom slice into the flour then add to the egg to coat and finally into the breadcrumbs so that each slice is well breaded.
  5. Arrange breaded mushrooms onto baking sheet then lightly spray with non-stick cooking spray. Bake 8 to 10 minutes, turning once during cooking, until golden brown and crispy.
  6. Serve portobello fries with ketchup or your favorite flavored mayo.

5. Beet Fries

Ingredients:

  • 2 large beets (peel and cut into 1/2 inch-wide sticks)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 grated Parmesan

Directions:

  1. Preheat the oven to 425 degrees F.
  2. Combine the beets, olive oil, and salt in a large bowl.
  3. Spread in a single layer on a parchment-lined baking sheet and bake for 20 to 25 minutes.
  4. Sprinkle grated Parmesan when the fries come out of the oven.

6. Baked Eggplant Fries

Ingredients:

  • 1 medium or 2 small eggplants (cut into thin slices)
  • 2 Tablespoons/16g arrowroot flour
  • 1 cup/112g almond flour
  • 1/2 tsp sea salt
  • 1/2 tsp ground coriander seed
  • 1/2 tsp ground cumin seed
  • 1/8 to 1/4 tsp cayenne pepper (depending on how spicy you want it)
  • 1 tbsp of organic coconut oil or extra virgin olive oil
  • 1 large egg

Directions:

  1. Preheat oven to 425 degrees F. Line a baking sheet with lightly greased parchment paper .
  2. Stir together the arrowroot flour, almond flour, and salt and divide evenly onto two shallow plates.
  3. In a separate bowl whisk together the coriander, cumin, and cayenne pepper with the coconut oil and egg.
  4. Roll the eggplant fries into the into the almond flour mixture on the first plate, then quickly dip into the egg mixture and then into the second plate of almond flour.
  5. Place the eggplant fries evenly onto the baking sheet and sprinkle with an extra pinch of sea salt.
  6. Bake for 15 to-20 minutes(depending on how think your fries are) or until crispy and browned.
